Banana and spelt pancakes (serves 4)
Ingredients
1.5 cup wholemeal spelt flour
3 teaspoon baking powder
2 tablespoon almond meal
300 mL milk
1 teaspoon vanilla extract
1 egg
1 large (ripe) banana, mashed
Pinch of salt
Margarine or butter for cooking
Method
1) Combine dry ingredients in a bowl (spelt flour, baking powder, salt, almond meal)
2) In a separate bowl, combine milk and egg whisk together.
3) Pour wet ingredients into dry ingredients and stir to combine
4) Add mashed banana
5) Add vanilla extract
6) Use a fork to combine the mixture
7) Heat pan. Use margarine or butter for cooking
8) Pour some batter and cook until you see small bubbles coming up on the edges of the pancake
9) Slide a spatula under the pancake to check if they’re done. Flip and cook the other side
10) Serve with your choice of toppings. I used chopped pistachios, cocoa dust, berries and maple syrup
