This recipe serves 2 and it’s a great way to do Meatless Monday which is a global movement that encourages people to reduce their meat intake to improve their health and the health of the planet!
Ingredients
125g linguini
3 cloves of garlic, finely chopped
1 brown onion, diced
400g mushrooms, sliced
400g canned tomatoes
300 g Meatless Meatballs from Vegie Delights
1 teaspoon chilli paste
1 chilli
1 tablespoon EVOO
30 g parmesan cheese
A handful of baby spinach
Method
1) Boil linguini pasta according to packet instructions. Drain and set aside
2) Cook Meatless Meatballs in the oven (this took about 15 mins)
3) Heat EVOO on a fry pan
4) Add onion and garlic. Cook until soft
5) Add sliced mushrooms and chilli paste. Stir and cover with lid
6) Once mushrooms are half cooked, add canned tomatoes
7) Slow cook mushrooms on low heat for about 20 mins. Season with salt and pepper
8) Add Meatless Meatballs and cook for about 5 mins
9) Add drained pasta and stir well into the mixture
10) Top with a handful of spinach and parmesan cheese
