Oatmeal and peanut butter cookies (serves 12)
Ingredients
2 eggs
180 g crunchy peanut butter
3/4 cup quick oats
1/3 cup self-raising flour
1/2 teaspoon baking powder
1/4 cup sugar
1/2 teaspoon vanilla extract
1-2 tablespoon of milk
A handful of chocolate chips
Method
1) preheat oven to 160 degrees (fan forced)
2) beat eggs in a mixing bowl. Add vanilla extract
3) combine dry ingredients together (flour, oats, baking powder, sugar)
4) use a spatula to combine dry and wet mixture together
5) add peanut butter and mix
6) add a tiny amount of milk to improve the consistency of your dough. Use a spatula to mix thoroughly
7) line tray with baking paper
8) place one teaspoon of dough on the tray and use the back of your hand or a wooden spoon to flatten it out so it takes a round shape
9) repeat with remaining mixture and leave enough room for cookie to expand (I did 6 on a tray). Top with chocolate chips (see last pic)
10) bake for 20 minutes until golden brown
